Sausage and Grits Casserole with Baked Eggs

As a child growing up in the South, many cold mornings were often met with a bowl of hot, cheesy grits.  They were inexpensive, easy to prepare and there was just something about the gooey, cheesy deliciousness that would warm me body and soul. Often times, my mother would serve a bowl of steaming grits with scrambled eggs or crumbled bacon or sausage mixed in. Today, the same things make it to the breakfast table for my family. Something about it just takes me home. 

I’ve taken the classic breakfast bowl I knew as a child and refined it a bit into this easy-to-prepare casserole. The same flavors of the grits and sausage are combined with some sharp cheddar cheese and cream cheese and baked to yield a delicious, satisfying dish. Top it off with some baked eggs and you have an easy breakfast that is perfect for a weekend family breakfast, but impressive enough for company.
