Top o' the Morning Lucky Charms Pancakes

Posted By Jessica Walker

Here is a delicious and festive way to start your St. Patrick’s Day!

A steaming hot stack of fresh pancakes is a great way to wake up the family. Make flapjacks extra special on St. Paddy's Day morning by adding sweet marshmallows to the batter. Grab Bisquick® baking mix and Lucky Charms® cereal...and away we go!

In a large bowl, whisk Bisquick mix, milk, vanilla and eggs just until blended.

Add green food coloring and whisk again. (Add just a few drops or go as crazy as you would like!)

Now for the fun part. Add 1/2 cup marshmallows from Lucky Charms cereal and mix. (I love those little marshmallows, so it's okay to sneak a few!)

For each pancake, pour slightly less than 1/4 cup batter onto a hot griddle. Cook about 3 minutes or until bubbles form on top and edges are dry. Turn; cook until the other side is golden brown and set.

Now forgive me, but I just had to throw this in here...the yummy sweet aroma from the griddle got my dog Taser's attention really fast. He didn't leave the kitchen!

Stack those green beauties and top with whipped cream and more marshmallows. Dig in! It's a great way to start your St. Paddy's Day.
