Greek Chicken Quinoa Bowls
Prep the bowl components up to two days ahead of time for super-easy night-of prep
Truthfully, I used to be fairly wary of quinoa. This uber-popular super-seed freaked me out and frankly, tasted a bit soapy. It wasn’t until later that I learned that one must rinse their quinoa before cooking it. Talk about a game-changer! It took a bit more convincing, however, to get my husband on board, but I found that using it as a base grain for easy, flavor-packed bowls like this one converted him quickly.
Besides the savory, hearty chicken and fresh salad, my favorite part about these Greek Chicken Quinoa Bowls is that they can be prepped in advance and assembled when ready to eat, making them ideal for super-busy weeks.
The fresh and bright salad really makes this meal shine. It’s a mix of cucumber, tomato, a little onion, lemon, olive oil, plus oregano and parsley for lots of flavor and color. (You’ll find the complete ingredient list below!)
