1Heat oven to 400°F. Spray cookie sheet with cooking spray. Grate bread on large side of a box grater. In small bowl, mix bread crumbs, walnuts, oil and thyme.
2In another small bowl, mix mustard and honey; spread over tops of salmon pieces. Sprinkle with bread crumb mixture, pressing gently so crumbs adhere. Place on cookie sheet.
3Bake 12 to 14 minutes or until salmon flakes easily with fork and topping is lightly browned.
