Strawberry Cucumber Salsa
cup chopped fresh strawberries
cup chopped cucumber
tablespoon finely chopped onion
tablespoon chopped fresh cilantro
Juice of 1 lime
Salt and pepper to taste
In small bowl, mix all ingredients until combined. Serve or refrigerate.
Add 1 small jalapeño chile, seeded and finely chopped, for a little heat.
Serve the salsa with tortilla chips or as a topping for grilled fish.
You can peel the cucumber or leave it unpeeled—whichever you prefer.
