Fast & Fresh Pineapple Salsa
cup chopped fresh pineapple
cup chopped red bell pepper
cup chopped purple onion
tablespoons chopped fresh cilantro
small jalapeño chile, seeds removed, finely chopped
teaspoon coarse sea salt
tablespoon fresh lime juice
tablespoon rice vinegar
In medium bowl, mix all ingredients. Serve immediately, or refrigerate until ready to serve.
Using 1 jalapeño chile makes a mild-medium salsa. Add another if you like it hot!
This salsa is best served the day it’s made, but allowing it to chill for an hour before serving does help develop the flavors.
You can easily double or triple this recipe for a crowd! To keep it even easier, buy pre-cut fresh pineapple.
