This easy slow cooked dinner will become one of your family’s favorite weeknight dinners.

My slow cooker gets used at least once a week. I love how easy it is to just throw all the ingredients in and come back to something wonderful at the end of the day. I also love how it makes my whole house smell so wonderful.

I usually make some type of pulled pork in my slow cooker. Slow cookers are perfect for cooking tougher cuts of meat and making them super tender. They are also great for adding tons of flavor to lean meats like the boneless skinless chicken breasts I used in this bourbon chicken recipe.

Bourbon chicken is our favorite dish to get when we order Chinese take-out, but I like it even more when I make it at home. I’ve made it a few ways, but this slow cooked recipe is definitely my favorite. I use bourbon, soy sauce, lots of ginger, garlic and sweet honey. It’s a slightly sweet and tangy chicken dish that is amazing over rice.

Before serving, I garnish with chopped green onions.
