That’s right they might think Mom has gone off her rocker but that’s okay it will get them to the table quickly. There’s no need to spoil the immediate surprise that these are indeed savory meatloaf cupcakes with mashed potato frosting and not the sweet cupcakes I’m sure they’re expecting.
From a distance these look like your normal delicious sweet sugary cupcakes. Come a little closer and you can see these are something different altogether. They’re actually mini meatloaves that are baked in your muffin tin!
I used my family meatloaf recipe but feel free to use your own. You can also jazz them up with cupcake liners if you prefer. We’ve gone au natural here.
All you need is a side of greens and you have an entire meal!
