Whether you are sick or you are well, this easy chicken soup will warm you up and it’s a cinch to throw together!
There is nothing worse than being sick. Especially the kind of sick when all you want to do is lay in bed and sleep until the sickness goes away. And almost just as bad is when someone you love is sick and in bed. Although there isn’t a whole lot you can do, there are little things you can do to help. Even if it’s just some warm soup to help your loved one fight off the chill.
It’s easy to put together a “get-well” basket for someone that is feeling under the weather. Just think about what you like when you are sick, grab a basket, and pack it up. For my get well soon basket, I included a box of tissues, a copy of a favorite book, some water (because staying hydrated is important when you are sick!), and of course, some chicken soup with a spoon. Packing it up in a jar makes the job super easy!
This chicken soup couldn’t be easier to make. No slaving over the stove for hours for great chicken noodle flavor–this soup comes together in about 30 minutes. And it’s nice and hearty, so it’s sure to make anyone feel better! Here’s how you make it.
You will need chicken broth, chicken breasts, olive oil, diced carrot, diced celery, diced onion, orzo pasta, water and chopped parsley.
Combine the broth and the chicken in a Dutch oven and bring to a simmer. Cook until the chicken breasts are cooked through.
Chop your carrots, celery and onions.
In a sauté pan, heat the olive oil and sauté the veggies until soft.
When the chicken is cooked through, remove it to a cutting board. Add the vegetables to the broth. Pour in the orzo.
Then add in the water. Allow the soup to cook until the orzo is tender.
Chop the chicken into bite-sized pieces, and when the orzo is tender, add the chicken back into the soup. Stir in the parsley and season with salt and pepper.
If giving as a gift, pour some of the soup into a jar, and tie a pretty napkin and a spoon to the jar. This soup is sure to make anyone feel a little better!
