There are endless possibilities for using creamy avocados. Here are my five favorite ways to eat them.

1. Avocado Cream
Avocado cream is a great accompaniment to grilled chicken topped with salsa. It’s also terrific with cheddar omelets and steak. To make it, simply peel and pit an avocado. Then place the avocado flesh into a food processor. Add about 1 tablespoon of lime juice; salt and pepper to taste. Whirl until it’s completely pureed. Use immediately. This makes enough for 2 to 4 people, depending on how much you love avocado!
2. Avocado Rice
Rice gets a delicious makeover when you combine 1 to 2 mashed avocados with 2 to 4 cups rice. A squirt of lime juice and some chopped cilantro (along with a little salt and pepper) make it totally shine. Serve this with grilled chicken, shrimp, steak or tofu.
3. Guacamole
You can’t talk about avocados without mentioning guacamole. It’s a classic that is fabulous with tortilla chips (and cold beer!), nachos, tacos and so much more. Check out this recipe for Classic Guacamole.
4. Stuffed Avocados
This one scores big points for presentation. Here’s what I do: Slice open an avocado; remove the pit. Scoop out the flesh and dice it. Mix the avocado with diced mango, black beans, cilantro and lime juice (or whatever you desire). Stuff the mixture into the avocado shells and serve. Or try Betty’s recipe for Potato-Tuna Avocados.
5. Sliced Avocado on Sandwiches
Last, but far from least, this favorite use for avocados is as simple as it gets. But it’s so, so good! Put avocado slices on your sandwiches. It’s amazing with turkey, divine with BLTs and irresistible with sharp cheddar and bacon. Or give California Chicken Sandwiches a try!
