I’ve come to the conclusion if I put veggies in between two flour tortillas and add cheese I can get my kids to eat just about anything. True story. The trick is to make the meal flavorful enough for the grown-ups and fun for the kids.
We adore black beans in our family. I work them into just about anything I can. They go seamlessly with tortillas, which is the base of this quesadilla. To the beans we add corn—it’s a punch of color and good for them. Spice things up with a good dash of Cuban seasoning and slide in onion, garlic and cilantro, chopped up as finely as possible so they fly under the radar.
These quesadillas serve as a quick lunch or for dinner we simply add a side of Mexican rice and chips and salsa or queso.
