I love salads. They are a great starter for dinner but also make a terrific meal. I’m always trying different flavor combinations, and one of my new favorites is Arugula Prosciutto Salad with Orange Honey Vinaigrette.

With prosciutto, oranges and arugula, you get a mix of salty, sweet and savory in each bite. Plus, chopped dates, creamy goat cheese and toasted almonds are sprinkled in.


The salad offers a double dose of fresh citrus flavor with orange slices and an Orange Honey Vinaigrette. Once you have made your own dressing, it is hard to use anything else. This one is a simple blend of orange juice, honey, champagne vinaigrette and olive oil.
The best part of salads is that you can easily substitute. Don't like goat cheese? Try sprinkling Parmesan cheese on top. Not a fan of arugula? Use romaine instead.
