At-the-Cabin Mojitos—Summer in a Glass
A light, thirst-quenching summer beverage, this rum-based mojito starts with fresh mint and lime juice.

A Mojito is a popular Cuban drink, usually made with rum, mint leaves, fresh lime juice and a little sugar. My version starts with a pile of fresh chopped mint leaves.

I’m not a big fan of having chopped or muddled leaves floating in my drinks. While fresh mint and other herbs provide a nice taste, they get stuck in my teeth. My solution is to cook the leaves in a simple syrup and to use the flavored syrup in drinks. |

After the mint syrup has cooled, it’s easy to make the drinks, adding rum, lime juice and club soda to the syrup. Traditionally, mojitos are served in high-ball glasses. But I like to serve mine in low-ball glasses with lots of ice and lime slices. Your drink is now ready to enjoy on the dock, at the beach or in your own backyard! |
