Louisiana Kickin' White Chicken Chili
Perfect for a cold winter day, this chili is full of comfort and flavor and comes together in a few simple steps.

The snow keeps piling up in my neck of the woods, so I am on the hunt for warming and comforting foods. My cousin from the warm southern state of Louisiana was kind enough to share her White Chili with Chicken recipe with me. It is a spicy and warm bowl of deliciousness that's full of flavor and low in fat!
Here is what you will need…

| First , add 4 cans of navy beans to a large pot. I drain and lightly rinse the beans. |

| Add 7 cups chicken broth. I used Progresso reduced sodium broth. This allows me to control the salt in the chili. |

| Add one diced onion and 2 cloves minced garlic. |
 |
|
| Then add 2 teaspoons oregano and 2 teaspoons cumin. |
 |

| Stir and bring to a simmer. |
 |
|
| Next, add 2 cans green chilies. |
 |
|
| Stir in 5 cups cooked chicken. |
 |
|
| Cover and simmer for 1 hour. |
 |
|
Top individual servings with sour cream, cheese and cilantro, and serve with a side of tortilla chips. If the chili is too thin for your liking, you can mash some of the beans to make the consistency thicker. Guaranteed to beat those winter doldrums…this chili is straight from the heart of Louisiana! |
