Tortilla Casserole with Smoked Sausage

Make-Ahead breakfast idea! Overnight tortilla casserole with smoked sausage, chiles and cheese.

Making this tortilla breakfast casserole is easy. All you need is about 20 minutes then you can cover, leave overnight and bake in the morning.

You will need eggs, milk, sausage, black olives, chopped green chiles, cheese and Old El Paso’s soft taco dinner kit.

First, in a large bowl, beat eggs, milk, and taco seasoning with wire whisk until well blended.

In another bowl mix sausage, black olives, chopped green chiles and some cheese.

Pour about a 1/2 cup of milk mixture into pan. Then, arrange 5 tortillas in bottom of pan, overlapping slightly.

Spread half of the sausage mixture over tortillas the top with about half of the milk mixture. Arrange the remaining 5 tortillas and sausage mixture on top then pour the rest of the milk mixture over to cover.

Scatter more cheese over casserole. Then, drizzle taco sauce (from dinner kit) over the cheese.

Now, spray a sheet of foil with cooking spray; place sprayed side down over pan. Cover; refrigerate at least 4 hours but no longer than 24 hours

In the morning, heat your oven to 350°F then bake uncovered 40 to 45 minutes until puffed, golden brown and the eggs have set.
