My husband and I have a Thai restaurant near our house that we love to go to now and then. Since we don’t eat out a lot and prefer to cook at home, I started making a few curry dishes of my own. Red curry is actually my favorite, although I do enjoy the green and panang curry as well.
I usually like things pretty spicy. But when I make this dish at home, I make it fairly mild so the kids will enjoy it. I serve some hot pepper flakes or hot chili sauce on the side so that my husband and I can spice ours up as much as we like.
The coconut milk and brown sugar give each bite a sweet flavor that the kids just love. It goes perfectly with jasmine or white rice. On nights when I don’t have much time to cook, I find it helpful to use a bag or two of ready-made rice so I can have dinner on the table in short order.
This dish is simple to make, but it’s best to have all your ingredients ready to go so you can get it all cooking in the pot quickly.
