Two of our family’s favorite comfort foods…straight from the heart of my family and the heart of the South.
Growing up, we used to take trips to Tennessee to visit our extended family during the summer. I remember there was always a lot of talking, a lot of hugs and a lot of food. The thing that I remember most about the food was that it felt like it was made with love. You could just taste it in my grandma’s and great-aunts’ dishes. My brother said every bite felt like “a little hug.” And it is true. Two of my favorites (as if there are only two) are homemade mac and cheese and an iced tea drink called Muddy Water. Add a Memphis-style barbecue sandwich and watermelon, and you have a comforting Southern-style meal!

First, let’s make the Mac and Cheese. This is my great-aunt’s recipe and is always requested by family, friends and whoever has tried it! You will need the following…

Cook the macaroni as directed on the package and rinse with cold water.


Next, grate extra sharp cheddar cheese and then beat eggs and milk in bowl.


Put cooked macaroni in a 9-inch baking dish. Pour in the egg mixture and cheese; mix well.


Add milk, salt and pepper. Mix well.

Bake in a 350 degree oven for 45 minutes and enjoy the creamy goodness!

Let’s also make the Muddy Water drink to go with our Southern meal. In saucepan, place tea bags and 2 cups of water. Heat almost to boiling. Remove tea bags.

In a gallon pitcher, combine frozen lemonade, frozen orange juice and tea. Fill pitcher to the gallon mark. Mix well.
Refrigerate for at least 45 minutes or until ready to serve. Stir before serving with sprigs of mint.
