Baked Scotch Eggs

This fair food favorite can be made at home and baked in your oven.

The smell of fried food hangs in the air at any summer fair. And as you wander around, there are so many delicious treats to choose from. I am not ashamed to say that I always gravitate toward the cheese curds and fried pickles, but I can’t help notice that the booth for Scotch Eggs always has a line of people waiting to try these savory treats. I was curious as to what makes people flock to these eggs, so I decided to try to make them in my own kitchen.

Here are the stars of the show: hard-cooked eggs, ground sausage and panko bread crumbs.

First, add a teaspoon of dried onion and a teaspoon of salt to the ground sausage.

Mix the sausage mixture by hand.

Then divide it into four equal portions.

Roll each hard-cooked egg in flour.

Put the egg in the middle of a sausage patty.

Form the sausage around the egg into the shape of a ball.

Beat one egg in a bowl. Dip each ball in the beaten egg mixture and then roll it in the panko crumbs.

Place balls on a cookie sheet and bake in a 400 degree oven for 35 minutes.

I rotated the sheet half-way through for even cooking. When they’re done, you can then either insert skewer sticks to serve them just like at the fair, or cut them in half and eat with a fork. Either way, Scotch Eggs will be a great addition to your breakfast, lunch or dinner table and will bring you back to your favorite summer fair!
