A New Twist on Nachos

Combine potato skins and nachos for your next game day get-together.

These Irish Nachos are a mash-up of two of my favorites foods: potato skins and nachos.  Instead of chips you use potatoes to create an appetizer that is cheesy, a little spicy and loaded with flavors.

For your next sports-centered get-together, place the toppings in little bowls and let your guests start creating. Once they’ve loaded up on their favorites, pop them under the broiler.  Offer a prize for the most creative nacho creation and let your guests vote!

I used waffle fries as the base for these nachos and loved them. Try the seasoned ones for even more flavor!

I sprinkled a layer of cheese over the waffle fries.

Place the shredded chicken across the top.

Sprinkle more cheese and top with the crumbled bacon and sliced jalapenos. If you don’t like your foods spicy, you can eliminate these for less heat.

These only need to be broiled for three to five minutes. You’ll know when they’re done when the nachos are bubbly and the waffle fries crisp.  Serve hot out of the oven with sour cream and extra hot sauce on the side.
