Thanksgiving is one of my most favorite holidays. There is family, friends and food! Lots of food generally means leftovers. I’m one of those people who loves leftovers. I really enjoy coming up with new and creative ways to turn extras into exciting “take two” meals. Waste not, want not.
When we think of Thanksgiving leftovers, we typically think of turkey. We all know about turkey sandwiches, turkey pot pie, turkey soup and turkey a la king. So I thought it would be great to share a creative way to turn extra cranberry sauce into a brilliant breakfast item.

Generally, we have family or friends in town for Thanksgiving, but the last thing I want to do after cooking for days is to prepare an elaborate breakfast the following morning.
You can whip up this muffin batter in minutes. Then all that is left to do is to pop the pan in the oven and to wait for the wonderful aroma to waft through the house and wake your guests. Add coffee and juice, and you have a simple yet satisfying breakfast!
