Bread Machine Bread

Bread machines make bread-baking a pleasure. Use yours to mix and knead dough for artisan loaves, hand-shaped rolls and more—all you have to do is shape and bake. Or let the bread machine do it all.

Bread Machine Mastery 

  • Read through your bread machine manual and recipe first, looking for helpful hints.
  • Add ingredients in the order specified in the manual.
  • Carefully measure ingredients—small variations can dramatically affect the outcome.
  • Use ingredients that are at room temperature, except for refrigerated items such as milk, sour cream, and eggs.
  • Bread machine yeast gives best results. It’s more finely granulated and disperses more thoroughly during bread machine mixing and kneading.
  • Bread flour is great for bread loaves, because it’s higher in gluten-forming protein, which gives bread extra height.
  • Opening the bread machine during rising or baking can cause the loaf to collapse, so peek only during mixing or kneading.
  • When you use the delay cycle, be sure yeast doesn't touch liquid or wet ingredients.
  • Don't use your bread machine’s delay cycle with recipes that include fresh dairy products (butter and margarine are okay), eggs, honey, meats, or fresh fruits and vegetables. Bacteria can grow while these ingredients stand in the bread machine for several hours.
  • If you want to experiment with ingredients, just make one change at a time in the recipe so you can clearly see the results.
  • You’ll get the most consistent results if you keep the bread machine in the same place and away from areas where drafts, heat, and humidity fluctuate. Keep the area around your bread machine open for good ventilation.

Dear Folks @ BC, I am serving in the middle of Afghanistan and have a very limited pantry. I have a bread machine that takes 4cups of flour per loaf. Presently I cannot get flour. I have yeast and many packs of Bisquick baking mix. Can I make bread with it in my machine? if so please give me a reciept to do it. Thank you very much either way.

I'm looking for sub rolls made from bread machine dough. Seeing the different flavors at sub shops like asiago, rosemary, wheat make me want to try them all.

I bought Better for Bread flour...I wonder is it okay to use for Bread Machine? I usually bought Bread Machine flour for my bread machine for over 15 yrs...When I ran out of Bread Machine flour and went to the store and couldn't find Bread Flour for Bread Machine. Hope to hear from you soon... Mae Madding

I love my bread machine. I use it to make a lot of items. Breads, cakes, sauces, jams, jellies and syrups (blueberry being my favorite). I had a machine marathon one weekend to see just what it could do. I even made a meatloaf and fried some onion rings in it. Just add the ingredients and set the program. The machine I have is the Zojiruhi BBCC-X20. What a wonderful machine.
