Blackberry Lime Scones

Jump start your breakfasts with mouthwatering scones that come together in just minutes!

I love to begin a weekend morning by baking scones. Don’t be intimated by scones...they come together quickly, rewarding you with buttery layers of dough! My scones are chock-full of blackberries and a hint of lime. The fruit adds moisture to the scones, which can sometimes be a bit dry, while the lime brightens up the flavors and is a fabulous complement to the berries.

To start, chop the butter and put it in the freezer while you gather the other ingredients. (Freezing the butter will make it easier to cut it into the flour.)

I take the zest and blend it into the sugar using my fingers.

I use a food processor to cut the butter into the flour. Pulse just until the butter is well incorporated and a crumbly dough is formed.

Transfer the dough to a large bowl; add the blackberries. I got messy and used my hands to blend them into the dough. Some of the juices will be released, causing the dough to take on a purple color, but that’s okay.

With your hands, form the dough into a flattened disk and cut into 8 wedges.

Brush with cream and sprinkle with sanding sugar to create a crunchy coating. Bake just until the edges begin to brown.

After they have cooled, drizzle with icing made with powdered sugar, lime juice and a drop of cream. 

Serve warm with a cup of coffee or tea, relax and enjoy!
