Walnuts
An extremely ancient nut, dating back to 7000 B.C. They are the fruit of the walnut tree, which grows in temperate zones throughout the world. Walnuts come in a variety of sizes and types, the English walnut and black walnut being the most popular. English walnuts are the most widely available and come in many varieties, some with moderately thick shells and others with shells so thin a tiny bird can crack them open. Walnuts are available year-round and can be purchased unshelled whole, in halves or chopped.
How to Buy
When buying walnuts in the shell, choose those free of cracks or holes. Shelled walnuts should be plump, meaty and crisp; shriveled nutmeats are past their prime.
How to Store
Store walnuts in the shell in a cool, dry place up to 3 months. For shelled nutmeats, tightly cover and refrigerate up to 6 months or freeze up to a year.
