Sun-dried tomatoes are vine-ripened tomatoes that are allowed to dry in the sun (some are mechanically dried) to remove the water from the tomato. The dried tomatoes have a soft, chewy texture and are intensely flavored. They may be packed dry (and should be rehydrated before using) or packed in oil. Twenty pounds of ripe tomatoes is needed to yield one pound of sun-dried tomatoes.
