Potatoes, Sweet and Yams
Sweet potatoes and yams are similar in many ways, but they are from different plant species. Sweet potatoes are often called yams. True yams, which are not widely marketed and are seldom grown in the U.S., are similar in size and shape. Yams contain more natural sugar and have a higher moisture content. Sweet potatoes are richer in vitamins A and C.
How to Buy
Choose nicely shaped, smooth, firm potatoes with even-colored skins. Choose potatoes of similar size.
How to Prepare
Scrub potatoes, but do not peel. To bake-Pierce potatoes to allow steam to escape. To boil or steam-Leave whole, or cut into large pieces.
How to Cook Conventionally
Bake: Uncovered in 375° oven about 45 minutes, in 350° oven about 1 hour, in 325° oven about 1 hour 15 minutes, or until tender.
Boil: Place potatoes in 2-quart saucepan. Add water just to cover. Heat to boiling; reduce heat to low. Boil gently (simmer)covered: Whole-20 to 25 minutes or until tender. Pieces-10 to 15 minutes or until tender.
Steam: Whole-covered 15 to 20 minutes or until tender.
How to Microwave
Whole: Pierce potatoes to allow steam to escape. Arrange on microwavable paper towel in spoke pattern with narrow ends in center. Microwave 9 to 11 minutes, turning once, until tender. Cover and let stand 5 minutes.
