A mixture of stiffly beaten egg whites and sugar. A soft meringue is spread over desserts such as pies and baked at a high temperature until lightly browned. A hard meringue is spooned onto a cookie sheet and baked several hours until dry and set, then topped with fruit, cream fillings or ice cream.
