Skillet
A long-handled shallow round all-purpose pan used to pan-fry and cook on top of the stove. It’s available with or without a nonstick surface, a feature worth considering for low-fat cooking and easy cleaning. Also called a frying pan, there are many sizes and brands to choose from.
How to Buy
Look for a solid, thick-bottomed pan that will transmit heat evenly and that has a tight-fitting lid. Although a 10-inch skillet is used most often, some recipes such as stir-fries work better in a skillet that is slightly larger. A smaller skillet, about 8 inches in diameter, is nice to have when cooking smaller quantities.
Tips
- A skillet is usually round to match the shape of the burner and has gently sloping sides to help remove moisture.
- Electric skillets are usually square or rectangular with a heating coil that matches the shape. They have removable adjustable thermostats that maintain even heat. Their shape makes them a winner when making pancakes and grilling sandwiches.
