A paring knife has a small blade, about 2 1/2 to 3 inches long, and a rounded or pointed tip. If you plan to have only one paring knife, choose one with a pointed tip. You’ll need it to cut up fruits and vegetables, cut fat from a steak or pork chop, cut into meats and poultry to check for doneness and for many other uses.
