Yogurt with Fresh Mint

Combine three key ingredients yogurt, cucumber and mint to create a dish that is cool and soothing to your lips and easy on your hips!

Ingredients

cup Yoplait® Fat Free plain yogurt (from 2-lb container)

large cucumber, peeled, seeded and shredded
1/2
cup chopped fresh mint leaves
1/2
teaspoon salt
1/2
teaspoon coarsely ground black pepper

  • 1 In medium bowl, beat yogurt with wire whisk until smooth. Stir in remaining ingredients.
  • 2 Refrigerate at least 1 hour to blend flavors. Cover and refrigerate any remaining yogurt mixture up to 2 weeks.

Expert Tips

If you like, 1 cup shredded raw carrots (about 2 medium) can be substituted for the cucumber.

Serve this yogurt sauce with whole wheat pita (pocket) breads or assorted fresh vegetables. It's also a nice accompaniment to spicy curry dishes.
