cup Yoplait® Fat Free plain yogurt (from 2-lb container)

large cucumber, peeled, seeded and shredded
1/2
cup chopped fresh mint leaves
1/2
teaspoon salt
1/2
teaspoon coarsely ground black pepper
  1. In medium bowl, beat yogurt with wire whisk until smooth. Stir in remaining ingredients.
  2. Refrigerate at least 1 hour to blend flavors. Cover and refrigerate any remaining yogurt mixture up to 2 weeks.

Substitution
If you like, 1 cup shredded raw carrots (about 2 medium) can be substituted for the cucumber.
