White Chocolate Mousse Bars

Ingredients

Crust

1 1/2
cups chocolate wafer cookie crumbs (about 26 cookies)
1/4
cup butter or margarine, melted

Filling

3/4
cup whipping cream
1
cup white vanilla baking chips (6 oz)
3
eggs
1/3
cup sugar
1/8
teaspoon salt

Topping

1/2
cup semisweet chocolate chips
1
tablespoon shortening

  • 1 Heat oven to 350°F. Lightly grease 8- or 9-inch square pan with shortening or cooking spray. In small bowl, mix cookie crumbs and butter with spoon; press firmly in pan. Bake 10 minutes.
  • 2 Meanwhile, in 1-quart saucepan, heat whipping cream and baking chips over low heat, stirring frequently, until chips are melted. Remove from heat. Cool 5 minutes. In large bowl, beat eggs, sugar and salt with wire whisk until foamy. Pour white baking chip mixture into egg mixture, stirring constantly.
  • 3 Pour filling over baked crust. Bake 25 to 35 minutes or until center springs back when touched lightly. Cool in pan on cooling rack 15 minutes.
  • 4 Meanwhile, in 1-quart saucepan, melt topping ingredients over low heat, stirring frequently.
  • 5 Spread topping over bars. Refrigerate uncovered until chilled, about 2 hours. For bars, cut into 6 rows by 6 rows. Store covered in refrigerator.

Made this for the first time for Christmas this year. My first attempt failed miserably. Something was wrong with the crust; either I didn't use enough cookies or didn't bake it long enough. Either way, the mousse managed to go underneath the crust, as well as be burnt AND under cooked. So I tried again. The second attempt, I used a pre-made chocolate graham cracker crust, and the filling stayed where it was supposed to. It cooked thoroughly, with a deep golden brown hue. It rose up a bit, but as soon as it was removed from heat it slowly flattened out. It had to add an extra 8 minutes to the bake time, though, to make sure it wasn't jiggly like jell-o in the middle.

I usually don't try recipes without reviews but this looked so deli n easy do tried it for dinner guests. Oh... It did not bake at all. When I baked it the top burnt n didn't bake! The only change i did was use a circular mold 9" .... Had to throw...
