cans (6 ounces each) water-packed tuna, drained

cups corn flakes, crushed to crumbs (1 1/2 cups)

cup mayonnaise or salad dressing

medium green onions, sliced (2 tablespoons)

teaspoon yellow mustard

tablespoon vegetable oil
Sour Cream Dill Sauce

cup sour cream
1/4
cup mayonnaise or salad dressing

teaspoon dried dill weed
  • 1 Make Sour Cream Dill Sauce.
  • 2 Mix tuna, 1 cup of the cornflake crumbs, mayonnaise, onions, mustard and egg. Shape mixture into four 4-inch patties. Coat patties with remaining 1/2 cup cornflake crumbs, pressing lightly to coat both sides.
  • 3 Heat oil in 10-inch nonstick skillet over medium-high heat. Cook patties in oil 2 to 3 minutes, turning once, until light golden brown. Serve with sauce.

I made this for dinner tonight....FABULOUS! Everyone liked it, even the picky one. I served it on a bed of lettuce, tomato, and red onion. It looked really pretty. I added a few extra ingredients to the tuna. I added 2 tsp. lemon juice, 1 tsp. dried red pepper flakes (for a kick), 1 tsp. fresh chopped garlic, 1 tsp. dried parsley, 1/4 tsp. ground pepper. I substituted 2 TB dried minced onions for the green onions (thats all I had). I did use 18 oz. of tuna (instead of 12 oz.) I wanted my patties a bit larger. I did make extra sauce. I think the sauce tasted better after it sat in the fridge several hours. It was very light and refreshing. I'll make this again.
