Broccoli joins avocado and coconut milk in these flavorful smoothies--a great start to a busy day!

Ingredients

  • 1 bag (12 oz) frozen broccoli cuts
  • 1/2 cup Cascadian Farm® frozen organic blueberries
  • 1 avocado half, pitted and peeled
  • 2/3 cup water
  • 1/2 cup coconut milk (not cream of coconut)
  • 2 teaspoons sugar

Steps

    Cook broccoli as directed on bag. Rinse with cold water until cooled. Drain.
  • 2
    In blender, place 1/4 cup of the cooked broccoli and remaining ingredients. (Cover and refrigerate remaining broccoli for another use.) Cover; blend on high speed about 30 seconds or until smooth.

    Pour into 2 glasses. Serve immediately.

    You can use reduced-fat coconut milk, but the smoothies may be slightly less thick. Leftover milk can be frozen in small quantities for future uses.
