cup frozen (thawed) apple juice concentrate

tablespoons chopped fresh parsley or 2 teaspoons parsley flakes

tablespoons finely shredded apples

tablespoons reduced-fat sour cream

tablespoons water
2
tablespoons cider vinegar
1
tablespoon Dijon mustard
1/4
teaspoon salt
1/8
teaspoon pepper

Salad

2
cups bite-size pieces romaine lettuce
2
cups bite-size pieces fresh spinach
1
cup bite-size pieces iceberg lettuce
1
medium zucchini, shredded (1 cup)
2
oz chopped fresh mushrooms (1/2 cup)

medium radishes, chopped (1/2 cup)
1
small red bell pepper, chopped (1/2 cup)

This was a big hit with the extended family. Really good flavor that even the picky eaters ate. In the future, I would definitely keep the wet ingredients separate and allow each person to determine their own amount of dressing, as the dressing made the last bit too soggy and so I had to throw out the leftovers instead of eating it later, as the soupy-soggy texture was unappealing.
