EXPERT TIPS

Expert Tips

Feta is also known as “pickled cheese” because this traditional Greek cheese is cured and stored in its own salty whey brine.

Be careful not to overcook the tomatoes. The feta cheese will be warm but not entirely melted.

As beautiful as they look, they aren't worth the mess of preparing them. The topping falls off when you move them to the plate and the tomatoes are mushy. Next time, I'll dice the tomatoes, mix in the other ingredients and put it on top of toasted French bread for a feta bruchetta.

2 minutes seems a bit long to cook tomatoes, but over all, a tasty recipe. I think I will add garlic next time.
