Tomato, Corn and Grape Salsa

Three summertime favorites—tomatoes, corn and green grapes—come together in an easy-to-make salsa, perfect for any warm-weather gathering.

medium tomatoes, seeded, diced
cup seedless green grapes, halved
cup diced cucumber
can (15.25 oz) Green Giant™ whole kernel sweet corn, drained
tablespoons lemon juice
tablespoons olive oil
tablespoons chopped fresh parsley
Salt and pepper

  • 1 In medium bowl, stir together tomatoes, grapes, cucumber and corn.
  • 2 In small bowl, beat lemon juice, oil and parsley with whisk until blended. Season with salt and pepper. Add to corn mixture; toss.
  • 3 Refrigerate at least 15 minutes before serving.

Expert Tips

Instead of dicing a medium tomato, try halving cherry tomatoes.

Serve at a barbecue, summer get-together, or as a simple side dish at dinner.
