Tangy Hot Cheese and Caper Spread

Arrive bearing this creamy cheese spread, full of deliciously salty capers, and you’ll receive an extra-warm welcome. It’s perfect on toasted baguette.

Ingredients

package (6 ounces) chèvre (goat) cheese with peppercorns, softened

cup shredded fresh Parmesan cheese (4 ounces)
1/4
cup mayonnaise or salad dressing
1/4
cup diced red bell pepper
2
tablespoons small capers, drained
Toasted baguette slices
  • 1 Mix all ingredients except baguette slices in shallow 6-inch microwavable quiche or au gratin dish. Microwave uncovered on High 2 minutes, stirring every 30 seconds.
  • 2 Serve cheese spread with baguette slices.

Expert Tips

Plain chèvre and a dash of black pepper make a great stand-in for the goat cheese with peppercorns.

Prepare the spread a few hours ahead. Cover and refrigerate until serving time, then heat in the microwave.

Sprinkle a few extra capers on top of the dip just before serving.

Capers have a flavor similar to olives. The buds vary in size. For this recipe, purchase capers that are very small, called nonpareil, so the flavor will be better distributed throughout the spread. Look for capers near the pickles and olives in the grocery store.
