Ingredients

  • 1 package (6 ounces) chèvre (goat) cheese with peppercorns, softened
  • 1 cup shredded fresh Parmesan cheese (4 ounces)
  • 1/4 cup mayonnaise or salad dressing
  • 1/4 cup diced red bell pepper
  • 2 tablespoons small capers, drained
  • Toasted baguette slices

Steps

    Mix all ingredients except baguette slices in shallow 6-inch microwavable quiche or au gratin dish. Microwave uncovered on High 2 minutes, stirring every 30 seconds.

    Serve cheese spread with baguette slices.

    Plain chèvre and a dash of black pepper make a great stand-in for the goat cheese with peppercorns.

    Prepare the spread a few hours ahead. Cover and refrigerate until serving time, then heat in the microwave.

    Capers have a flavor similar to olives. The buds vary in size. For this recipe, purchase capers that are very small, called nonpareil, so the flavor will be better distributed throughout the spread. Look for capers near the pickles and olives in the grocery store.
