Sweet Potato Mallow

16 oz can vacuum packed sweet potatoes (or 3 med yams)

1/2

cup sour cream

1/4

tsp mace

1/2

tsp salt

1

egg yolk

3/4

cup marshmallows

• 1 Preheat oven to 350 degrees
• 2 In mixer bowl, combine sweet potatoes, sour cream, egg yolk, salt and mace. Beat on medium speed until smooth.
• 3 Pour mixture into buttered 1-quart casserole; top with marshmallows. Bake 30 minutes or until marshmallows are puffed and golden brown.
