Strawberry-Melon Spinach Salad

Pick up spinach leaves and green onions in the produce department, then swing by the deli for melon and strawberries. Add our orange-honey dressing, and voilà—instant salad!

Dressing

tablespoon orange juice
1
tablespoon honey
1 1/2
teaspoons olive or vegetable oil
Salad

cups bite-size pieces fresh spinach
1/2
cup sliced strawberries
1/2
cup cubed cantaloupe

medium green onions, sliced (2 tablespoons)
  • 1 In tightly covered container, shake all dressing ingredients.
  • 2 In large bowl, toss all salad ingredients with dressing.

Expert Tips

Fruits offer a host of nutrients including vitamin C to accompany their great taste. Be sure to get at least 2 to 3 servings of fruit daily.

Skip a step! Use a store-bought raspberry vinaigrette instead of the homemade orange- and honey dressing.

This is a great salad to be creative with by using other fresh ingredients that are in season. Baby spinach and other melon varieties such as honeydew can be used. Squeeze fresh oranges for the juice required for the dressing.

Even though the bag of spinach leaves may say “triple washed,” go ahead and give them another rinse to make sure your salad is dirt free!
