Spinach and Marinated Tomato Pizza

Ingredients

  • 1 cup grape tomatoes, halved
  • 1/4 cup reduced-fat balsamic vinaigrette
  • 1 box (9 oz) frozen chopped spinach
  • 1 package (10 oz) prebaked whole wheat pizza crust
  • 1/4 teaspoon black pepper
  • 3/4 cup fresh mozzarella pearls (5 oz)
  • 2 tablespoons thinly sliced fresh basil leaves

Steps

    Heat oven to 425°F. In medium bowl, place grape tomatoes and vinaigrette; stir to coat. Set aside.

    Cook spinach as directed on box. Squeeze to drain well.
  • 3
    On ungreased cookie sheet, place pizza crust. Spread spinach evenly over crust; sprinkle with pepper. With slotted spoon, remove tomatoes from vinaigrette; arrange tomatoes over spinach. Top evenly with mozzarella cheese.

    Bake 8 to 10 minutes or until cheese is melted and bubbly. Sprinkle with basil.

  • If you can’t find the pearl mozzarella cheese, use regular fresh mozzarella, and cut into 1-inch pieces.
  • Sprinkle with crushed red pepper flakes to bump up the heat.
