Spinach and Ham Omelet

A quick on-the-run meal turned into a family favorite! My two-year-old twins even love it, and so will you!

Ingredients

3
eggs
Chopped ham
Fresh spinach
Philadelphia Cream Cheese
Fresh ground salt and pepper to taste
water
2 1/4
1/4 cup Feta Cheese

  • 1 Crack 3 eggs and beat in a bowl, add chopped spinach and water and set aside.
  • 2 Rinse and chop fresh spinach and sautee over medium heat in olive oil. Add philadelphia cream cheese to pan and mix with spinach until completely melted. Add egg mixture to pan and allow to spread evenly over spinach mixture. Add salt and pepper to taste.
  • 3 Let mixture cook on low heat for 2 minutes, flip over once and let cook another 2 minutes. Add first 1/4 cup portion of Feta Cheese to one side of mixture and fold other side over.
  • 4 Remove from pan, and dress finished omelet with 2nd 1/4 cup portion of Feta Cheese if desired.
