cup butter or margarine, softened

tablespoons lemon pepper

large potato, cut lengthwise into fourths

medium zucchini, cut lengthwise in half
1
medium yellow summer squash, cut lengthwise in half
2
large bell peppers, cut lengthwise into fourths and seeded
1
medium onion, cut into 1/2-inch slices
Bibb lettuce, if desired

cup Italian dressing
  • 1 Heat coals or gas grill for direct heat.
  • 2 Mix butter and lemon pepper. Brush on potato, zucchini, squash, bell peppers and onion.
  • 3 Cover and grill vegetables 4 inches from medium heat 10 to 20 minutes, turning frequently, until tender.
  • 4 Line platter with lettuce. As vegetables become done, remove from grill to platter. Sprinkle with dressing. Serve warm.

Expert Tips

Here’s a healthy twist! For no fat and only 105 calories per serving, omit the butter. Spray vegetables with butter-flavored cooking spray, then sprinkle with lemon pepper. Use fat-free Italian dressing.

Any Italian-style dressing or vinaigrette works well with this recipe, so choose your favorite.

Too many veggies for our grill basket to hold - I forgot the onions and we could still barely close it! The end result was delicious overall. The potatoes took way too long - it was a very big potato, we ended up removing the other veggies and continuing to grill the taters. Next time I would probably boil the potato a little bit, and we would omit the zucchini - turns out we don't like it enough to eat it this plainly.

I ran out of gas on my grill after I''d already cut and prepared everything to be cooked, so I layered everything in a baking dish and threw it in the oven. I cooked it at 375 for about 30 to 40 minutes (don''t really remember for sure how long, I just kinda kept checking it to see when they were tender). It still came out great...just very, very flavorful. Eat these vegetables with something mild.
