Recipe Fact
To reduce a sauce means to cook it until some of the liquid evaporates. Not only does this process thicken the sauce, it also intensifies the flavor.
Ingredient Info
Rioja is a dry red wine from the LaRioja province in Spain. The oak barrels in which it is aged impart a vanilla flavor.
Ingredient Substitution
Try another cooked link sausage, such as Spanish smoked chorizo, for these coins.
