Spanish Sausage Coins

Enjoy these Spanish appetizer coins that have all the wonderful richness of Polish sausage, fragrant spices, canned tomato sauce and a splash of red wine – ready in just 30 minutes!

Ingredients

tablespoon olive oil

cup finely chopped onion

garlic cloves, minced

lb. cooked Polish sausage or kielbasa links, cut into 1/2-inch-thick slices

teaspoon paprika

teaspoon coriander
Dash ground red pepper (cayenne)

(8-oz.) can tomato sauce
1/4
cup dry red wine (such as Rioja, Bordeaux or Merlot)

  • 1 Heat oil in large skillet over medium heat until hot. Add onion; cook 4 to 5 minutes or until softened, stirring occasionally.
  • 2 Add garlic; cook and stir 30 to 60 seconds or until fragrant. Add sausage slices; cook 2 to 4 minutes or until lightly browned, turning once.
  • 3 Stir in paprika, coriander and ground red pepper. Add tomato sauce and wine; cook about 5 minutes to reduce slightly, stirring occasionally. Serve warm sausage mixture with cocktail toothpicks.

Expert Tips

To reduce a sauce means to cook it until some of the liquid evaporates. Not only does this process thicken the sauce, it also intensifies the flavor.

Rioja is a dry red wine from the LaRioja province in Spain. The oak barrels in which it is aged impart a vanilla flavor.
