cans (12 oz each) Pillsbury® Golden Layers® Flaky Original refrigerated biscuits

package (9 oz) frozen cooked southwestern-seasoned chicken breast strips (2 cups), thawed, diced
1
can (4.5 oz) Old El Paso® chopped green chiles
1
cup shredded Monterey Jack cheese (4 oz)
1
tablespoon dried minced onion
1
cup Old El Paso® Thick 'n Chunky salsa (any variety)
Fresh cilantro sprigs
  • 1 Heat oven to 400°F. Spray 20 regular-size muffin cups with cooking spray. Separate dough into 20 biscuits. Place 1 biscuit in each muffin cup; press to cover bottom and side of each cup.
  • 2 In medium bowl, stir together chicken, chiles, cheese, onion and salsa. Spoon 2 tablespoons mixture into each dough-lined cup; gently press mixture with back of spoon.
  • 3 Bake 13 to 18 minutes or until edges are golden brown. Remove from muffin cups. Serve warm garnished with cilantro sprigs.

I made these for our Super Bowl party tonight and they turned out great! I added an extra 1/2 cup of chicken and 1/2 cup of cheese. I also used the larger flaky biscuits and just peeled them in half. It made 52 cups, which meant there were a few extra for us to test ourselves, and they turned out great!

My husband and I loved these! They made for a fun dinner and combined everything we love! I grilled the onions in butter before adding them and also added some chopped jalapeños. I used the large biscuits but they turned out to be too big. I could not fit enough of the chicken mixture in the middle without it overflowing. Next time I will split the biscuits in half.
