Heat up turkey with prepared Cajun seasoning, then cool it down with sour cream or a mild salsa.
(3/4 to 1-lb.) turkey thighs, skin removed
tablespoon olive oil
teaspoon dried Cajun seasoning
cup Old El Paso™ Thick 'n Chunky salsa
cup sour cream
Brush turkey thighs with oil; rub with Cajun seasoning. Place in single layer in 4 to 5-quart slow cooker.
Cover; cook on Low setting for 7 to 8 hours.
Just before serving, remove turkey from slow cooker; place on cutting board. Cut turkey into slices. Serve turkey with salsa and/or sour cream.
Large slow-cookers accommodate turkey thighs, but oval-shaped cookers handle them the bet. Arrange the turkey thighs in a single layer to ensure even cooking.
Seasonings can fade after hours of slow cooking. To perk up flavor, sprinkle the sliced turkey with additional Cajun seasoning just before serving.
Seal any leftover turkey in a resealable plastic food storage bag and refrigerate it for up to two days.
