2-lb beef boneless arm roast, trimmed of fat

medium onions, sliced

can (14.5 oz) Italian-seasoned diced tomatoes, undrained
1/4
cup tomato paste

hoagie buns, toasted if desired

cups shredded mozzarella cheese (8 oz)
  • 1 If beef roast comes in netting or is tied, remove netting or strings. In 4- to 5-quart slow cooker, place onions. Place beef on onions. In small bowl, mix diced tomatoes and tomato paste; pour over beef.
  • 2 Cover; cook on Low heat setting 8 to 10 hours.
  • 3 Remove beef from cooker; place on cutting board. Use 2 forks to pull beef into shreds. Return beef to cooker. Spoon about 1/2 cup beef mixture onto each bun. Top each with 1/4 cup cheese.

    I think this recipe was just OK. Was a little bland, but I believe adding a little kosher salt and pepper would have fixed that. Also if I were to make this again I think I would mix a little cornstarch with some reserved juices after pulling the beef from the pot for shredding, to thicken the sauce a bit.....

    We liked these quite a bit, but I did make some changes though. I used a chuck roast instead of an arm roast, and I sprinkled a little dry Zesty Italian dressing mix (from a 0.6oz. package) over the roast before adding the tomatoes. When I served them, I sprinkled a little parmesan cheese on top (along with the mozarella) and we put a little ranch dressing on them. Yummy! My guy rated these a 10 (which I guess would translate to 5 spoons).
