slices bacon, chopped

lb boneless country-style pork ribs, cut into 3/4-inch pieces

cup finely chopped onion

cup shredded carrots

can (14.5 oz) diced tomatoes, undrained

can (8 oz) tomato sauce

teaspoon dried thyme leaves

teaspoon pepper

cans (15 to 16 oz each) great northern beans, drained

lb cooked kielbasa, cut into 1/2-inch pieces
  • 1 In 10-inch skillet, cook bacon, pork pieces and onion over medium-high heat 8 to 10 minutes, stirring occasionally, until pork begins to brown.
  • 2 Spray 3 1/2- to 4-quart slow cooker with cooking spray. In cooker, place pork mixture. Stir in remaining ingredients except beans and kielbasa. Layer beans over top.
  • 3 Cover; cook on Low heat setting 6 to 7 hours.
  • 4 Stir in kielbasa. Increase heat setting to High. Cover; cook 30 minutes longer or until thoroughly heated.

Expert Tips

The flavor of this French-inspired casserole is improved by quickly browning the pork with the bacon and onion.

Kielbasa is a Polish pork sausage.
