EXPERT TIPS

Expert Tips

Many seasonings and herbs will fade during the long cooking time. When slow cooking, taste the dish about 30 minutes before serving, and add additional seasonings if desired.

Dried minced garlic is often used in a slow cooker any time you want a more flavorful dish with a garlic flavor, such as this chili. Fresh garlic fades in the slow cooking, while the dried form holds up better and nicely flavors the dish.

Do you prefer one type of bean over others? This dish is colorful and flavorful with the variety of beans, but feel free to substitute one kind of bean for another if you have a preference.

Chipotle chiles are readily available canned in a spicy adobo sauce. Use one chipotle chile for this recipe, and then freeze the remaining chiles. Spread the chiles in the sauce in a single layer on a plate and freeze until firm. Then, transfer to a resealable freezer bag, label and freeze for future use.
