box (7.7 oz) Betty Crocker® Deluxe loaded au gratin potatoes

cups fat-free (skim) milk

lb Canadian bacon slices, cut into strips

box (9 oz) Green Giant® frozen sugar snap peas, thawed, drained
  • 1 In 10-inch deep-sided nonstick skillet, heat water and butter to boiling over medium-high heat. Stir in potato slices from mix; return to boiling. Boil 15 minutes.
  • 2 Do not drain potatoes. Stir in contents of sauce packet from mix, the milk, bacon and sugar snap peas. Return to boiling. Reduce heat to medium; cook 4 to 5 minutes longer, stirring occasionally, until sauce is slightly thickened.
  • 3 Sprinkle with contents of topping packet from mix. If desired, season to taste with pepper.

My family was not a fan of this recipe. I'm the only one that would eat it. Guess I won't be making it again.

This was very easy to make for a weeknight meal. My store did not have the potatoes listed, so I used the loaded casserole potatoes. You could also use broccoli in place of the sugar snap peas.

I used a little different ingredients just because the ones in the recipe are not yet available in our area, but this was a great recipe. Deluxe loaded au gratin potatoes are not yet available for us so I used two 4.5 oz boxes of Betty Crocker Loaded Bake Potatoes. I also could not find the sugar snap peas so I substituted frozen peas. Great flavor and can't wait for the deluxe potatoes to make to our town. The sugar snap peas arrived today in our Wal Mart, wouldn't you know it was after I had made this already.
