Sesame Green Beans

Crushed red pepper flakes add some zip to tender green beans sprinkled with crunchy sesame seeds.

1lb fresh green beans
2teaspoons sesame seed
1tablespoon rice vinegar
1tablespoon reduced-sodium soy sauce
1teaspoon sugar
1/2teaspoon crushed red pepper flakes
1.In 2-quart saucepan, heat 1 inch water to boiling. Add beans. Boil uncovered 5 minutes. Cover and boil 3 to 5 minutes longer or until crisp-tender.
2.Meanwhile, in ungreased 8-inch skillet, heat sesame seed over medium-low heat 5 to 7 minutes, stirring frequently until browning begins, then stirring constantly until golden brown. Stir in remaining ingredients; heat through.
3.Drain beans. Pour sauce over beans; toss until evenly coated.
High Altitude (3500-6500 ft):  After adding beans, boil uncovered 5 minutes. Cover and boil 4 to 6 minutes longer.

Kitchen Tips
A 1-pound bag of frozen green beans can be substituted for the fresh green beans. Cook as directed on the package, then continue with the recipe.
Be sure to remove the sesame seed from the heat just as it turns golden brown. It will continue to brown even after you take it off the burner.
